Happy St. Patrick’s Day ☘️ A big scoop of mint chocolate chip ice cream between ✌️ fudgy brownie crinkle cookies : )

I should’ve made this sweet combination a long time ago. The first bite 💃 beyond delicious! It’s been awhile since I’ve baked these fudgy-sweet crinkles —- everyone I know loves brownie cookies 😁 A something “green” food post was a must for St. Patty’s day. Interesting side note ~ years ago, a colleague mentioned azure or sky blue was once the official color of Ireland….not emerald green 🤭?!? Let me get back to baking life sweeter ….
I can’t take credit for the ice cream but I did bake these scrumptious cookies. Perfectly delicious on their own or choose your favorite scoop of ice cream. Ingredients
- 7 oz 70% cacao dark chocolate chopped
- ½ cup unsalted butter
- ¾ cup granulated sugar
- ½ cup light brown sugar
- 2 large eggs
- ½ tsp vanilla extract
- 1 cup all-purpose flour
- 2 tbsp cocoa powder unsweetened natural or dutch-processed
- 1 tbsp black cocoa powder (see notes)
- 1 tsp baking powder
- ½ tsp coarse sea salt
- garnish: flaky sea salt
